Pumpkin Bars with Frosting


2 cups flour
2 cups sugar
2 tsp baking powder

1 tsp baking soda
½ cup chopped nuts (I use walnuts)
¾ cup oil
4 eggs
2 tsp cinnamon
16 oz can pumpkin


FROSTING

3oz cream cheese (I use reduced fat)
1 ½ tsp vanilla
2 cups powdered sugar
1 tsp milk (I use whole milk)


Heat oven to 350*

Combine all ingredients and mix until well blended. Pour batter into a well greased 9x13 glass dish.

Bake at 350* 30-40 minutes until middle is done – check the middle with a tooth pick to make sure it’s done.

Beat all frosting ingredients until smooth. Frost when partially cooled.
